Cake Mastery I – 4 weeks

Course Objectives

  • Learn and practice the foundations of buttercream cake decorating techniques using a variety of tools and skills
  • Plan, design and decorate 3 unique cakes showcasing techniques learned in class, including a 2-tier stacked wedding cake.

    1. Introductions and ice breaker
    2. Class expectations
    3. A word or 7 about baking
    4. Tools of the trade: What you need & what you want
    5. Help! I need another kitchen!
    6. Designer Digs: Theme and Audience
    7. Does size really matter?
    8. 8 Days a week – The importance of using your calendar
    9. Icing recipe: Decorator Buttercream
    10. Demo: Flat icing
    11. Hold me, fill me, squeeze me: Learning to love your piping bags.
    12. Demo: Stars, Lines, Shells, Dots, Leaves, Daisies, rosettes
    13. Hands-On: Preparing piping bags, Stars Lines, Shells, Dots, Leaves, Daisies, rosettes
    14. Slice ‘em and Dice ‘em: how to slice a round cake.
    15. Homework: Bring 2 uniced cake rounds on a plate or board and 2 quantities of icing for next class.
  2. Class Two
    1. Welcome Back: Q & A
    2. Demo: Flat icing review[round], Rustic Drag technique, Rosette Icing technique
    3. Hands-On: Ready, Set, Ice!
    4. Demo: Review – Stars, Lines, Shells, Dots, Leaves, Daisies
    5. Demo: New – Reverse shell, offset hearts, pearls
    6. Hands-On – Reverse shell, offset hearts, pearls
    7. Demo: New Cornelli lace, hearts, rosebuds, leaves
    8. Hands-On - Cornelli lace, hearts, rosebuds, leaves
    9. Design and decorate round cake
    10. Picture Perfect!
    11. Homework: Bring 2 uniced cake squares on a plate or board with 2 quantities of icing for next class. Bring pictures of 2-tier buttercream cakes.
  3. Class Three
    1. Welcome Back: Q & A
    2. Demo: Fillings and icings, Dam & Ice, Flat icing review [square], vertical ruffle technique, horizontal ruffle technique, pipe and pull technique
    3. Hands-on – ice square cake
    4. Demo: Rope Border, e-motion border, ruffle border
    5. Hands-on – Decorate square cake with 4 different techniques
    6. Demo: Writing on cakes
    7. Hands-on: Writing on cakes, borders
    8. Demo: Roses
    9. Hands-on : Roses
    10. Cake Design + Planning: 2-tier cakes
    11. Picture Perfect
    12. Homework: Bring all elements for your 2-tier cake
  4. Class Four
    1. Welcome Back: Q & A
    2. Demo: Any techniques class would like reviewed
    3. Hands-on: Ice 2 cakes
    4. How we stack up: Preparing cakes to be stacked
    5. Demo: Stacking a 2-tier cake – dowels and straws and stakes
    6. Hands-on: Ready, Stack, Go!

    This class is taught by Kristina Romasco, Certified Master Cake Decorator & Owner, Dolcezza Custom Cakes. 

      Class Registration Policies

      • Class registration is offered on a first come/first served basis. 
      • No discount of any kind can be applied to classes. 
      • Space in each class is limited. If the class is full, you may wish to be placed on a waiting list. If there are more than 4 people on the waiting list, an additional date for the class will be offered. 
      • Class registration fees are non-refundable. However, if you are unable to attend, you may send someone else in your place. 
      • Classes are subject to cancellation, postponement or rescheduling due to insufficient enrollment or inclement weather, at our discretion. Refunds will only be issued if you are unable to attend a postponed or rescheduled class, and for cancelled classes. NOTE: This class will proceed as there is sufficient enrollment at this time.
      • Please arrive on time as class will start promptly at the scheduled time. 
      • Please turn off all cell phones, PDAs, tablets, notebooks, beepers, pagers, tweeters, squeakers, honkers, etc. during class.
